if you are using proftp you can specify the path in the conf file :
SystemLog /var/log/proftpd.log
TransferLog /var/log/xferlog

I have the built in pure-ftpd running. I have no logs under /var/log. I guess there should be added something to the /etc/pure-ftpd.conf to start logging, but what?
