Rsync and reading files outside of the NAS

I have the DNS 321 and am using 2 drives.  I am using rsync to backup some folders from one drive to the other.  I use a login to access the NAS from my different computers, just an added layer of security.  So I preserved the owner and group for the files so I could still manipulate the files on the backup drive by logging in.  Now my question is accessing those files if the NAS was to die (not the drives but the device itself).  So I would use linux to read the EXT3 filesystem.  I am not all that familiar with file permissions and linux, but can I still access the files as "root" on a linux box with the drive mounted?  Will any linux system as "root" be able to read files off of any drive with any type of permissions?

Yes you will be able to access the files as root if the disk was removed from the nas and put into a linux box.
