I am thinking about buying this NAS device, to replace my server at home. i only need Exim, httpd and proftd or any other FTP server on it. Will I be able to carry this out? I googled, and found everything except the Mail server.
Other than this, I would use it for my iTunes storage, Time Machine and iPhoto library.
Any performance issues with it when in RAID1? I have never seen this device. If I connect it to my Apple Airport Extreme router on 100MBit, will I get the 100Mbit actually, or the RAID1 slows it down a bit?

different RAID configurations can speed up / slow down your read / write ... chose the RAID that supports your initial requirements (eg, data integrity .. though this is different depending on who you talk to)
read up on RAID level's to get a better understanding

Yes, I do know that RAID versions differently affect speeds, I am more curious about someone who already has it. My Speed to my laptop cannot exceed 100MBit/sec which is the normal 100 LAN speed. If RAID1 on the 323 can perform 100MBit/sec, I am fine with it already.
We have RAID1 on some machines, and RAID5 on others. RAID5 is way much faster, but RAID1 is not too bad either on our servers, however I dont know how it would behave on the DNS323.
The other question is even more interesting about the Email server, etc
