I've never used a UPnP AV Server before and I was wondering if anyone familiar with how UPnP AV could help me out or direct me to a website with more information.
In order to use the UPnP AV Server do I need a a piece of hardware connected to a TV to play the video or audio?
Is there some software so that other computers on my network or outside of my network to connect and play the AV files from the UPnP AV Server?

in simple terms, a UPnP server is just something (device) that will stream / distribute music, movies, pix & other stuff where applicable (different appliances will distribute other information).. figured your just wanting to know about music / vids here so ill just stick to that
you can just do a general search on google eg, define: UPnP within the google search field, that should get you some incites.. also PLENTY of forums out there on this topic
if you are referring to the DNS-323, it is supposed to have a UPnP server .. a little different than iTunes, but essentially does the same function (distribute music in its simplest definition). however, this function within the 323 (at least with my opinion) does not work.. or yet has not worked for me. so, if it does work? well, you would be able to stream your music to a PC running a UPnP client (search google for clients). sample client can be but not limited to, XBOX 360 / PS3 and play that media on your TV.
making it available for those outside your network, well, i would suggest you start a new topic as that can open a new kettle of fish

Just a quick word
UPnP - or Universal Plug'n'Play is a set of protocols that allow network devices to communicate with and configure one another - essentially to reduce the setup issues in consumer environments. UPnP is not without it's drawbacks, which include potential security issues - some folks like to point fingers at the Microsoft Windows implementation, what I will point out is that any technology that allows automatic configuration of a firewall will also allow that firewall to manipulated by those who have the necessary skills.
AV server - or AudioVideo server is the component that would "serve" the audio & video data to whatever device will show or play it.
Your UPnP AV Server is an audiovideo server that incorporates UPnP tecnology, to allow a UPnP equipped media player to communicate with it.
